5 Classic Salad Fillings for Sandwiches

I love making salad fillings for buffet sandwiches.  The convenience of making them ahead is a real time saver on busy party days.  I find that the classic recipes with a few slight modifications are still the best.

Each of the recipes below can be served in multiple ways.  I like to use mini-croissants, silver dollar buns, or even serve the salad by itself in a pretty bowl with a tray of crackers.  

For the sandwiches, I usually add a leaf of romaine or other leafy green, decorate each sandwich with a frilled toothpick, and arrange each variety on a different platter. 

Here are the five varieties of sandwich fillings I rely on for events.  

I usually make 2 for variety, but you could certainly make any or all of them.

This recipe has been around a long, long time and it's still a winner.  Whether you add grapes and put it on a bed of greens or use the basic recipe to fill croissants, it's an all-around favorite.

Imitation crab is a great go-to for a frugal sandwich filling.  The addition of the sour cream gives it a little extra tang.

My husband came up with this recipe many years ago.  It's so good I can't even describe it.  It's great as a sandwich and a definite winner with crackers.  If you're only going to make one of these varieties, this is the one to try.

Curry is a great flavor addition to many dishes and it's especially good with eggs.  The flavor helps replace some of the salt, too.  Try this on small slices of rye bread or rye crackers.

This is from a Norwegian Lutheran cookbook that dates back to 1957. That says it all.  Those Ladies' Aide women knew what to bring.  If you want to get 50's-fancy with it, serve it on a wedged tomato.
