Quick and Easy Italian Hummus

Today I want to share a recipe for a quick and easy Italian hummus.  

I know purists will insist that it isn't really hummus without the tahini, and that's probably true.  However, this recipe has the same texture and it's very kid friendly.  In fact, my grandsons call it "pizza hummus".  Anything that tastes like pizza is a winner with them.

One can of beans would probably be plenty for a family dinner, but if you are bringing this to an event, 2 cans are a better bet.  Here's the recipe.

Italian Hummus

2 cans garbanzo beans, drained

3/4 cup Kraft Sun-Dried Tomato Salad Dressing

2 garlic cloves, minced or 1 tsp garlic powder

Olive oil as needed

Place the first 3 ingredients in a food processor and blend.  Drizzle additional olive oil as needed to thin the hummus out to your desired texture as you pulse.  This works better than to add more dressing which might be overpowering.

Optional ingredients:  The addition of a small jar of sun dried-tomatoes, 1 tsp dried basil and/or 2 Tbsp grated parmesan cheese will enhance the Italian flavor even further.  Adjust the oil accordingly.

Serve with pita crackers and an assortment or raw vegetables.
